Chocolate panna cotta with passion fruit recipe

I was working on this idea of a just-set, slightly blancmange-like chocolate milk for this dessert when I had to ask myself the question: how does one exaggerate or emphasise the taste of chocolate? I had nailed the texture, but was still not happy with the taste until I realised what was missing was salt. When I tried it, I knew I had found the answer.

For the passion fruit jelly

  • 4 passion fruit
  • 2 leaves bronze gelatin
  • 400ml orange juice

For the panna cotta

  • 400ml whole milk
  • 100ml double cream, plus extra to serve
  • 1 tbsp brown sugar
  • 1½ heaped tbsp cocoa powder
